The Inga edulis, or Ice Cream Bean, is a perfect choice! This can grow to be over 30 feet tall, making it a dramatic focal point in any yard. Its broad, leathery leaves are dark green and glossy, providing year-round interest. But the real showstopper of this tree is its long, bean-like pods. These pods are filled with a delicious white pulp that tastes like vanilla ice cream – hence the plant’s common name.
